Lemon Pound Cake

I was originally going to make a marble swirl pound cake.  I decided that was too much work today.  I have to manage some baking and a shower during the girls' nap time today. Neeeext.  Lemon Pound Cake from Starbucks sounds yummy.  I need to take a scone break, coffee company visiting later. Hmmm... Ok so all the recipes I found for Lemon PC included zest, peel or extract.  All I have in the fridge is one of those lousy lemon shaped squeezy bottles of lemon juice.  Ok, I'll try it.  The worst that happens is that it isn't very lemony flavored.  Far from a fail if I still get pound cake out of it. I have fresh strawberries in the fridge and some cool-whip in the freezer.  I can make it work, if need be. Ya know, cause cool-whip and strawberries would be a horrible compromise riiight?!
The recipe calls for a lemon juice and table sugar topping.  In my experience, confectioner's sugar sounds like it might work better than granulated, and I have some in the cabinet.
Note: I realize there is my container of vanilla extract in the ingredients photo. Um yeah, whoops. No vanilla in recipe. I just had it on the counter for my original recipe and forgot to put it away.

Lemon Pound Cake adapted from food.com



1/2 cup unsalted butter, melted & cooled to room temperature
1 cup sugar
2 eggs, well beaten
1 1/2 tablespoons lemon juice
1/4 teaspoon salt
1 1/2 cups flour
1 teaspoon baking powder
1/2 cup whole milk
Icing
2/3 Cup Confectioner's sugar
1/8 Cup Lemon Juice

Mix together sugar and butter. 

Separately mix flour, salt and baking powder.  To sugar mixture, add eggs and 1 tablespoon of lemon juice; mix well. 

Then add flour mixture, stir until combined.

 Finally add milk and mix until fully combined. 

Transfer to a greased loaf pan.

Bake at 325°F for 1 hour,or until golden brown.
For Icing:
Mix 1/8 cup lemon juice and 2/3 cup sugar. Mixture will be thick but you do not need a lot of it. Spread evenly over the top of a slightly cooled pound cake.  It may not look like enough but I promise it is.

The Lemon Pound cake came out beautifully!  My company arrived while it was still in the oven so I forgot to get a photo of it pre-icing.  It was gorgeous!  I will definitely keep this in my arsenal of recipes to bring to a get together of any kind. The texture was slightly on the crumbly side but I may try this recipe again with a suggestion of Lemon pudding as part of the mix. 

Definitely a win! The Toddler 100% Approved. And I didn't even let her try the icing!
