Lemon Chicken Oven Bake

Lemon Chicken Oven Bake adapted from
1/4 cup Italian Dressing
1/2 cup Chicken Stock
1 Tbs Honey
4-6 Bone in Chicken Thighs and drumsticks
3 Medium sized Potatoes
5 Garlic Cloves
1 Lemon

Pre-heat oven to 400.  Mix together the stock, honey & dressing, set aside.  Wash and cube potatoes into bite sized pieces (leave the skin on). Put these in a non stick 9x13 baking dish. Peel garlic and slightly crush the cloves with your knife, using the flat side. Toss garlic in with potato.  Nestle chicken in potatoes, skin side up. Drizzle stock, honey & dressing mixture over the chicken & potatoes.  Try to slightly toss the potatoes so they are all coated.  Now, slice an entire lemon into 8 wedges lengthwise and place on top of chicken and potatoes.  Cook Uncovered for 45-50 minutes.
This was a quick and easy recipe that I adapted slightly from the Kraft Website.
