Cheesy Pepperoni Pizza Quick Bread adapted from Picky Palate
1 cup Whole Wheat Flour1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1 1/2 tablespoons olive oil
3/4 cup buttermilk
1/4 cup shredded Parmesan cheese
1 1/4 cups shredded Mozzarella cheese
1 cup quartered pepperoni slices, about 32 slices
1/2 cup 4 Cheese Pasta Sauce
Italian Seasoning & extra Mozzarella to top it
Preheat oven to 375 degrees.
Place flour, baking powder, baking soda, salt and pepper into a bowl, mix to combine. Slowly add in eggs, oil, buttermilk, Parmesan, Mozzarella and pepperoni until just combined. Pour half of batter into a 9" round Non-Stick Pan. Top evenly with red sauce gently with the back of a spoon. Pour remaining batter over sauce. Top with mozzarella cheese & sprinkle with Italian seasoning. Bake for 30 minutes or until toothpick comes clean from center. Let cool for 30 minutes before removing from pan. Slice and serve warm or room temperature.
I had pepperoni in the pantry just WAITING for the right day to make this recipe! I will definitely pick a different pepperoni for the next batch. This particular one was extra greasy. What a nice change for lunch though! Being a big East Coast NY Style Pizza lover... this was definitely going out on a limb for us.
This is like the perfect recipe to bring for a pot-luck lunch.
