Buttermilk Pancakes
Mmmm. Buttermilk Pancakes definitely had that extra yummyness my normal pancakes seem to now be missing. How will I ever go back now?? Ugh! For the price point it's definitely a treat. That's right up there with trying to buy fresh fruit [top dollar$$] in the middle of winter in the North East. That is something that I can't wait for. Farm Stand season. They don't call it the Garden State for nothin. The Toddler knows the difference, canned peaches are just not the same!! We get lots of local apples in September which is great but by February I'm dying for some fresh berries and melon or anything that doesn't cost $4 a pound.

Cappuccino Muffins
This recipe is from Tuesdays with Dorie and Tracey's Culinary Adventures has the recipe posted. I used the espresso in the milk method and only used a teaspoon of Cinnamon in the batter instead of a tablespoon. I also went the muffin route. Per suggestion of The Way the Cookie Crumbles, one of my favorite blogs. Good Choice. Only minor flop was that I left them in the oven like 3-4 minutes too long. They were just on the verge of being over done. We enjoyed them regardless. A bit of powdered sugar on top. Perfect! Recipe makes 12 standard size muffins. I also opted out of the frosting. Didn't need it. Next time I will sprinkle a few more mini chocolate chips on top. I tested it on half to see if the chocolate was overwhelming but it wasn't.

Happy New Year's Eve, can you bring dessert?
We were invited to an old family friend's house for NYE. My dessert tray at our Christmas Eve party was a hit so naturally I was on dessert duty for the festivities once again. 2010 was definitely a year of new traditions, some due to [obviously] having another baby and other traditions and regularly scheduled gatherings changing because of divorces. Two couple's divorces really caused a rift in a formerly close nit group that effected everyone. Especially me. How do you choose? Well I didn't. Choices were made for me in some cases, others I just tried to stick with 'the usual' scheduled holiday celebrations. That left certain divorcees to just work around me. I'm okay with that, I mean why should I change MY agenda because of someone else's life choices... Ugh.Okay enough of that nonsense. Dessert.

Three Days of Christmas
On the first night of Christmas Eve we visited friends, opened presents and ate food. On the second day that was actually Christmas we had over family, ate food and opened presents. On the second day of Christmas afternoon we visited family, ate food and got 'The Envelopes' full of money. On the second day of Christmas evening we had over more family, more presents and Chinese food! On the third day of Christmas, family came to us, I made food and the girls got MORE presents. On the fourth day of Christmas we have leftovers and I actually must start doing laundry again. Oh wait, Hubs found more presents. In two weeks we'll have the 5th day of Christmas at Auntie L's, see more family, eat more food and most likely get MORE presents.
Somehow being broke still means my kids got a lot of presents. How does that work??

Bacon Egg & Cheese Toastys
I adapted my creation from a blog that inspired me The Way the Cookie Crumbles. Find recipe here. I of course am not a fan of the runny egg. I scrambled mine and used 1/2 an egg for each cup 7 total (plus one for good measure. My muffin tin fits 12.) Seasoned them with my new seasoning love "Crazy Salt" and some whole milk. Baked them until they appeared to be done, turned the oven off, topped off with some shredded cheese then back in the oven till company arrived.
Having a toddler around means remembering to buy two types of milk and who remembers to do that? Neither Hubs nor I. I think we decided 2 weeks into her Whole Milk switch that we'd sacrifice our 2% for now. Now I'm remembering how I gained my baby weight back.
